They are highly nutritious, low-calorie, and nutrient-dense fungi that support immune function, heart health, and antioxidant defenses. They are rich in fiber, vitamins B and D, protein, and antioxidants like ergothioneine. Which increases the color when they are in colder temperatures (50s-60s°F) and enough lighting. </span><span style="font-weight: 400">The caps are white to greyish-blue and have a curved shape that resembles an oyster shell, giving it the name “Oyster Mushroom.”</span></h5>
