Welcome to your 7th ReFresh newsletter of the season! As we go from mid May to June, we’re wrapping up this month with fresh ideas. This newsletter is full of tips, tasty recipes, and community happenings to get you prepared for June. Let’s make the most of these final days of May!

Blue Corn Meal

Blue Corn Meal is made from blue corn dried kernels that are grinded and milled into a fine or gritty texture. Traditionally grown in the Southwestern United States and Mexico. It has a nutty, earthy flavor and a deep blue‑purple color that comes from anthocyanins, the same antioxidants found in blueberries and grapes. 
What is Blue Corn and what are its health benefits?
Blue corn meal is high in fiber, and in protein then yellow and white. Having a lower glycemic index, meaning it raises blood sugar more slowly.  It contains iron, zinc, and magnesium at higher levels than white or yellow corn. It also reduces inflammation, helps with energy and helps to keep you full longer. 
Preparation/Storage: 
Add it to your baking routine. You can make tortillas, chips, bread, pancakes, tamales and muffins. You can also make it as porridge or a hot drink for the winter time. You can store it in an air tight container to keep moisture and air out. Keep it in a cool dark place for short time storage like a cupboard or pantry.
