What is a Daikon Radish and what are its health benefits?
A long, crunchy radish, and it is purple. It is firm,crisp, and mildly peppery. Its purple and white flesh stays crunchy because it has less water than other types of radishes. It is packed with Vitamin C, Fiber, and Vitamin E. This radish also contains potassium, calcium,phosphorus, and anthocyanins. Helps boost immunity, helps with digestion and helps with inflammation.
Preparation/Storage: You can store in the fridge up to 1-2 weeks by wrapping them with plastic or newspaper. Cooking it can be saved for about 3-7 days. To freeze them they can last about a month. To prep you can eat them raw, peel the skin, or leave the skin on. They can be made for salads and slaws if you thinly slice them. Grate them as a topping, roast for stir-fry, and in soups and curries. You can boil them like a potato until soft or pickle them.

This Daikon radish and cucumber salad can be eaten as a side dish or as a main dish. This dish is refreshing and full of water because daikon and cucumber are packed with water. Peel the cucumber for less bitterness if you are not using English cucumbers.
Spicy Roasted Daikon Radish Fries

Roasting creates a wonderful caramelized “crust” for this fries recipe. When you eat them, think of them more as spicy roasted carrots, instead of potatoes. Daikon Radishes are high in vitamin C, folate (Vitamin B9), calcium, magnesium and potassium.
