What is green garlic and what are its health benefits?

Green garlic, also called spring garlic, is the baby form of the garlic plant. Even though green garlic is immature, it is packed with different nutrients such as fibers and a plant compound called allicin. Allicin makes garlic have a strong and pungent smell and taste. It is beneficial for building a strong immune system and cholesterol health. You can eat the green garlic raw on salads, add it to soups, roast, grill, etc. Check out this soup recipe. You can substitute green onion with green garlic.

  • This chicken with tatuma squash dish is simple and versatile. You can substitute chicken with other protein sources such as pork and tofu. Vegetables in the ReFresh bag, such as carrots, onion, and green garlic, can also be added to the dish.
  • This salad recipe is packed with fiber and vitamins. You can use the mustard mix, sunflower sprouts, and carrots from the ReFresh bag!
  • This quinoa salad recipe is simple and nutritious! Quinoa is a great source of protein and fiber. Adding nuts increases the fiber and healthy fat for this delicious salad.

Live After Five
The Albuquerque Museum has a free event on the third Thursday of the month called, “Live After Five”. There will be live music from Lara Manzanara and an exhibition, “The Printers Proof: Artist and Printer Collaborations”. You will be able to create a work of art, go to a yoga class, and listen to music!
