What are tomatoes and what are their health benefits?
Tomatoes are in the nightshade family, which includes eggplants, potatoes, peppers, etc. There are different types of tomatoes such as beefsteak tomatoes, heirloom tomatoes, cherry tomatoes, Roma tomatoes, etc. Some nutritional benefits of tomatoes include promoting eye and skin health and cancer prevention properties. This is because of the plant compound called lycopene. Lycopene is responsible for the red color of tomatoes and is a carotenoid. A way to increase the lycopene availability in our body is to cook or eat with oil because lycopene is fat-soluble, which means it needs fat to be used in the body.
Check out this delicious baked tomato cup recipe. You can substitute bacon with sliced tofu or tempeh. Enjoy with a side salad, rice, or beans!

Walk With Ease Self Directed Program via Zoom

Do you want to get more activity on your own time and at your own pace, with the support of a coach and team members? Plan to join the Bernalillo County Extension Office for Walk With Ease, a six-week program designed to:
  • Teach the 5 step walking method
  • Reduce pain
  • Build confidence in doing activities
  • Improve overall health and well being

The South Broadway Library

The South Broadway Library is going to have a “The Ins and Outs of a Honey Bee Colony” workshop. During this workshop, you will learn about bee colonies, see live bees, and sample a variety of Albuquerque honey.
