What is Baby Kohlrabi and what are its health benefits?
Kohlrabi is a cruciferous vegetable in the same family as broccoli, cauliflower, Brussels sprouts, mustard greens, collards, and kale. It can be eaten raw or cooked and is great for salad or coleslaw. It tastes like broccoli but is a bit sweeter and crunchier.
Kohlrabi is rich in vitamin C, which helps the body reduce inflammation, improve immunity, and fight off infection. Vitamin C can also lower cholesterol.
Kohlrabi is also rich in folate, an important nutrient for pregnant women because it can help prevent some birth defects.
Storage and Food Safety:
Wash hands before and after handling fresh produce.
Wash thoroughly and store with leaf stems removed.
Kohlrabi can be stored in the refrigerator for several weeks.
Storage life can be extended if kohlrabi is placed in sealed perforated plastic bags.
To prevent cross-contamination, keep kohlrabi away from raw meat and meat juices.
