What is Baby Bok Choy/Joy Choi, and what are its health benefits?
Baby Bok Choy and Joy Choi are variations of Chinese cabbage. Their taste is often compared to spinach. It has crisp, white stalks and soft, dark green leaves that are all edible! Unlike the larger, more mature bok choy, baby bok choy is often more tender and sweeter in flavor.
Nutrition and Health Benefits:

Vitamin K and Calcium are both found in bok choy, which supports strong bones.

Vitamins A and C help fight inflammation and protect cells from damage.

High in folate and fiber, which contributes to heart health.

A good source of choline, which can reduce cholesterol, support your metabolism, and is great for your brain health, too.
Storage Tips:

Avoid washing before storing. Wash right before use.

To prevent rotting caused by moisture, wrap in a damp paper towel and place in a plastic or produce bag.
