What are chicken eggs and what are their health benefits?

Chicken eggs come from…you guessed it, chickens! Specifically female chickens called Hens. Eggs have a hard outer shell that is either white or brown depending on the breed of hen. The nutritional value of white eggs vs brown eggs is identical.
Inside the egg, you will find a yellow yolk and a clear substance surrounding the yolk called the egg white because when the egg is cooked the clear substance turns white due to the heat changing the structure of the protein.
Eggs are a great source of protein and a host of other essential nutrients. One large egg typically has around 7 grams of protein. The amount of protein varies depending on the size of the egg – the bigger the egg, the more protein it has and vice versa.
Eggs can be prepared in many different ways including fried, scrambled, poached, or hard-boiled.

  • Roasted fresh green chile at home is simple and delicious! Green chile is a great source of vitamin C. It contains up to six times more vitamin C than a single orange! Green chile also contains vitamins A, B and E. These vitamins are important in maintaining a healthy immune system.

  • Butter Lettuce Salad with Lemon Dijon dressing is easy to make and packed with nutrients! Check out the recipe here: Butter Lettuce Salad with Lemon Dijon dressing. Butter lettuce is named after its smooth buttery texture. This incredibly soft lettuce has a slightly sweet flavor and is a great addition to any salad or sandwich. Two cups of butter lettuce contains 70% of your daily recommended intake of vitamin A.

Big Jim Farms Green Chile U-pick season is here! Now until the end of October everyday from 8am-6pm you can go onto the farm and pick your own green chili. Parking is free and you only have to pay for the green chile that you pick.
New this season they have a flower field with sunflowers and other flowers in bloom that you can pick to make your own bouquet!
Pumpkin picking starts at the end of September until Halloween.
They accept EBT and double up Food Bucks for Green chile, pumpkins and produce!
Bring sunscreen, a hat, and bottled water!
