What is living lettuce and what are its health benefits?

Living lettuce is harvested with its root intact. That is why it has “living” in the name. The variety of the living lettuce included in this week’s ReFresh is butter lettuce. You might find the texture is smooth and velvety and the flavor is mild. It consists of more than 90% water, which helps us hydrated. It is also high in vitamin A, which is important for eye, skin, and lung health. 
You can make wraps or salads with living lettuce. Check out this recipe for simple chicken and bean burritos. You can also add shredded carrots and radish to the burritos for extra crunch and nutrition.

Good news! All New Mexicans are eligible for free at-home Covid-19 testing. All you need is a photo I.D., email address, and internet connection. Here’s how it works: order your free Covid-19 test here and a test kit will be shipped to your home. Once it arrives, you must then participate in a short zoom meeting in which a Vault employee will walk you through the testing process. Ship your completed test kit and get your results in 24-48 hours after it arrives at the lab. All New Mexican’s are eligible, whether or not they are exhibiting symptoms.
