Anasazi Beans
What are Anasazi Beans and what are their health benefits?
Anasazi beans are heirloom beans with a long history in the American Southwest. They are kidney-shaped, speckled maroon and white. While related to pinto beans, they are milder, sweeter, and creamier. They are sometimes called cave beans, Appaloosa beans, Aztec beans, and Jacob’s Cattle beans. Anasazi beans are considered heirloom beans because the seed stock traces back over 50 years and is linked to beans found in ancient Ancestral Puebloan sites. These beans are easier to digest. Compared to other beans, they contain 25% less gas-causing sugars. As a result, they cause less discomfort and bloating. Anasazi beans are high in fiber, which supports digestion, gut health, and steady blood sugar levels. They are high in protein and support energy, muscle repair, and they keep you full longer. These beans are also high in calcium, potassium, and iron, which supports bones, heart function, and oxygen transport in the body.
Storage and food safety
Store dry beans in covered containers in a dry, cool place. You can store them for several months. Rinse beans until water turns clear. Make sure beans are clear of any rocks or dirt. Then let them soak to reduce cooking time. Beans can be cooked in a saucepan, pressure cooker, crockpot, or even a microwave oven. Anasazi beans have less cooking time than pinto beans. After they have been cooked, you can fry them, put them in stews/soups, side dishes, mix them with meats, or even put them in salads. For more information check out Beyond Gumbo
