Hominy is dried corn kernels that are processed using a method called nixtamalization. Nixtamalization, soaking and cooking the corn kernels in an alkali solution, make the dried corn kernels easier to digest and increases the availability of calcium and certain vitamins.

Roasted vegetables with hominy
Ingredients (makes 4 servings):
– 2 potatoes, washed and diced
– 2 carrots, washed and diced
– 1 tbsp oil of your choice
– ½ tsp of TSK spice shake or herbs or spices of your choice
– Salt and pepper to taste
Optional: 1 cup hominy, defrosted and rinsed
Optional: ½ cup cheese, shredded
Instructions:
1. Preheat the oven to 400F.
2. Rinse the hominy and dice the potatoes and the carrots.
3. Toss hominy, potatoes, and carrots with oil in a baking dish.
4. Add salt and pepper as needed.
5. Put the baking dish in the oven and roast until the vegetables are tender, about 20 minutes.
6. If preparing cheese, shred the cheese and sprinkle on top of the roasted vegetables, and roast for another 5 minutes or until the cheese melts.
7. Sprinkle the TSK spice shake or any herbs on top and enjoy with a salad or on its own!
Pineapple husk tea
Ingredients:
– 2 liters of water (about 8 cups)
– Rind from ½ pineapple
– 1 cinnamon stick, about the length of a pen (optional)
– 1 2-inch knob of ginger (optional)
Instructions:

Put the water on to boil.

When it starts to boil, add the pineapple rind, cinnamon, and lastly the ginger.

Let it boil for 10 to 15 minutes until the ingredients soften and release their properties.
- Strain out the solids.
- Add a sweetener of your choice or enjoy as it is.

You can drink it hot or cold.
