Tokyo Bekana Cabbage

What is Tokyo Bekana Cabbage and what are its health benefits?
Tokyo Bekana Cabbage is a type of cabbage that can be described as a mix between cabbage, bok choy, and lettuce. It can be eaten raw, roasted, grilled, or sauteed for a delicious flavor and a bit of crunch. It is an excellent source of fiber, which is important to regulate digestion and overall gut health. It is also a good source of vitamin C, which helps boost your immune system.
Storage tips: Wrap in a slightly damp paper towel and place in a sealed plastic bag. Keep in the fridge for up to one week.
Try adding this simple Tokyo Bekana Cabbage Slaw to sandwiches, egg rolls, tacos, or on its own as a side dish!

Recipes We Love!

  • Papas con Huevos: Mix in a little red or green chile for a classic New Mexican breakfast.

Nutrition Information:
 

  • Sunflower Sprouts: Sunflower sprouts provide protein and are rich in vitamins and minerals
  • Daikon Radishes: Daikon radishes contain nutrients like calcium, magnesium, and potassium, which are important for bone and muscle health. One serving provides over 100% of your daily vitamin C intake.
  • Potatoes: Potatoes are an excellent source of energy and provide vitamins, minerals, and antioxidants.
  • Granola: TSK Food Group: Granola is made with New Mexico grown ingredients. Granola is nutrient-dense, meaning a small amount contains a lot of protein, fiber, vitamins and minerals.
Substitutions: For vegan options, plant-based egg substitutes, vegan yogurt, and maple syrup (instead of honey) can be substituted.
