What is quinoa and what are its health benefits?

Quinoa is a small, round grain that’s super nutritious and easy to cook! It is light, and fluffy, and works in all kinds of dishes, from salads to stir fries.
Fun Fact:
Quinoa is gluten-free, so it’s great for those who can’t eat gluten! It is still super tasty and packed with other nutrients, making it a great swap for pasta or rice.
Quinoa is rich in:

Protein because it has all the important building blocks our bodies need

Fiber as it supports digestion and gut health. It is also digested slowly, which helps keep blood sugar steady and prevents big spikes

Iron that helps carry oxygen in your blood, keeping you energized and preventing fatigue

Magnesium which supports muscle and nerve function
-
Potassium which keeps your heart and muscles working properly and helps control blood pressure
Cooking Tips:
Rinse and drain quinoa thoroughly in cold water and strain through a sieve. Bring quinoa, broth, or water to a boil then reduce to a simmer. Cover and simmer without disturbing for 15 minutes. When done, the grain looks soft and translucent, and the germ ring will be visible along the outside of the grain. Fluff with a fork when done.

ABQTRU Core Group

The ABQTRU Core Group in partnership with Together for Brothers, is seeking dedicated members to help advocate for transit riders in Albuquerque. Core Group members will participate in biweekly meetings, collaborate on decision making, co facilitate meetings, and engage in community outreach to support a more accessible and equitable public transit system.

Offcenter Arts offers free, drop in creative workgroups open to everyone! Explore various activities, including writing, collage making, drawing, etc. Materials and support is provided and no registration needed!
