Welcome to your Fifth ReFresh newsletter of the season! As we have jumped right into spring, let’s all take some time to enjoy the blooming flowers, ideal temperatures, outdoor activities, farm-fresh produce, and the welcoming of new life.

What is Tatsoi and what are its health benefits?

 

Tatsoi is a leafy green cabbage and goes by other names such as spinach mustard, spoon mustard, and rosette bok choy. Tatsoi has white or green stems and leaves that are broad. Its taste is mustardy, semi sweet, earthy, and a sweet scent. Tatsoi can be eaten both raw and cooked with a texture similar to spinach, but the tastes differ.
Health Benefits to Tatsoi:
  • High in Calcium, which is good for building and maintaining strong healthy bones.
  • High in Vitamin C, which is necessary for growth, development, and repair of all body tissues.
  • High in Vitamin A, which helps to maintain normal vision, immune system, reproduction system, and growth and development.
  • High in Vitamin K, which helps to make various proteins in the body that are essential for blood clotting and the building of bones.
  • High in Folate, this is good for red blood cell formation and for growing healthy cells and proper function. For women who are pregnant or are planning to become pregnant taking folate is essential as it can help to prevent birth defects.
  • High in Potassium, which helps regulate muscle and heart contractions.
Storage: To preserve and get the most out of Tatsoi, wrap the leaves in a damp paper towel and store them in a bag in the refrigerator for a duration of 3-5 days.

Recipes We Love!

New Mexico Green Chile Stew

  • Try P2’s New Mexico Green Chile Stew, this scrumptious stew is a great well-balanced bowl of nutritious and delicious food, it can be enjoyed for any meal of the day and is great all year round.
Ingredients:
½  – 1 pound extra lean ground beef
12-24 oz. ( 2-3 cups) of chopped roasted New Mexico green Chile
3-4 large red potatoes, chopped small
1 small red onion, finely chopped
5-7 garlic cloves, finely chopped
4-6 small fresh tomatoes (steamed, peeled, and chopped) or 2 cans of diced tomatoes
 ⅓  cup beef bouillon
9-10 cups of warm water
Instructions:
  1. Brown ground beef in a large and deep cooking pan on medium heat
  2. Add chopped potatoes on top of the beef and cover with a lid. Let simmer until potatoes become tender, then stir beef and potatoes together.
  3. Add tomatoes and green Chile to the pan; followed by warm water and bouillon and stir all together. If Chile is too thick, add more water to the consistency you desire as well as the bouillon.
  4. Lower heat, cover, and let simmer. stirring occasionally, until Chile comes to a full boil. Once it is boiling, remove from heat and set aside to cool down… Buon appetito!!

 

  • Try Pinto Potato Pepper Bowls, this dish makes for a healthy nutritious all-around meal that is well balanced containing many nutrients and a plant-based protein.

  • Try Tatsoi and Hoisin Salmon Stir Fry. This savory dish is perfect for lunch and dinner anytime during the week. It is easy to make, tastes great, and has many nutritional benefits of calcium and Vitamin C, which are important for bone health and immunity.
