What are carrots and what are their health benefits?
Carrots are a popular root vegetable with a crunchy texture and slightly sweet taste. Many carrots you find will be orange, but they can also be yellow, white, orange, red, or purple. Carrots are a great source of beta carotene, a form of vitamin A that helps keep our eyes healthy. Carrots also have antioxidants, which are good for overall health.
To store your carrots, cut off the green tops. Keep carrots in an air-tight container or bag in the refrigerator to help keep them fresh longer. Carrot tops are delicious and nutritious as well. You can add carrot tops to soup, pasta, or even make a pesto with them.

This salad with sunflower greens and avocado is quick and easy. Mash ½ avocado!
with lime juice, salt, and pepper using a fork. Add sunflower greens, tomato, and avocado mixture to a bowl and enjoy. The avocado adds healthy fat and vitamins to this snack or side dish, which is important for your heart health. -
Cantaloupe is delicious fresh, but for something new, you can try this roasted cantaloupe recipe. Try having it with a little yogurt and TSK granola on top. This quick snack or breakfast provides calcium, protein, fibers, and more nutrition to support your overall health!

Community Resources
The Bernalillo County Cooperative Extension Service (CES) through New Mexico State University is offering multiple classes and webinars for the community in July and August. The topics of these classes vary and include gardening and farming, cooking with fresh foods, and preserving foods. Most of these classes are free to the public and will be offered online, and some are taught fully in Spanish.
