Tatsoi is a type of dark green leafy vegetables that is high in beta carotene. Beta carotene is important for skin, eye, and lung health. Tatsoi is also called spoon mustard because of its spoon-shaped leaves and a mild mustard taste. It can be sauteed and added into salad or smoothies.

Ingredients (makes 4 servings)

1 cup tatsoi

1 sweet potato
-
1/2 yellow onion
-
2 sprigs thyme and/or sage, minced

2 tbsp olive oil or oil of your choice

A sprinkle of TSK spice shake

Salt and pepper to taste
Instructions

Rinse tatsoi and sweet potato to make sure there is no dirt on them.

Slice the sweet potato (with skin) into 1/2-inch cubes, and the onions into strips.

Heat the skillet over medium-high heat and add oil.

Add and saute sweet potatoes and onions in the skillet for 10- 15 minutes or until the potatoes are tender.

When the sweet potatoes and onions are being cooked, use a fork or fingers to de-stem the thyme or sage. Then, mince thyme and/or sage leaves using a knife.

Turn down the heat to low heat. Add tatsoi and minced herbs and saute for 3-5 minutes or when the tatsoi is tender.

Sprinkle some TSK spice shake on top and enjoy with beans, rice, tortilla, or on its own!

This grilled pork and cheese quesadillas recipe is a good option for snacks or as a light lunch. You can use the cheese from Tucumcari Mt. Cheese Factory and tortilla from Sabroso Foods! For protein, you can use tuna, beans (from Ness Farm), tofu, or any meat to substitute pork.

This roasted corn on the cob had cheese from Tucumcari Mt. Cheese Factory and is sprinkled with some delicious TSK spice shake. You can roast any vegetables such as carrots, summer squash, winter squash with vegetable oil or butter. Sprinkle some TSK spice shake on top to add more flavor!
