What are sunchokes and what are their health benefits?
Sunchokes, also called sunroots, or Jerusalem artichokes, are native to central North America. They come from a species of sunflower grown for their tubers – or roots – and can be cooked or eaten raw. Sunchokes are packed with inulin, a type of insoluble fiber that is beneficial to our gut health. Because of their fiber content, sunchokes are also beneficial for blood sugar management.

Recipes We Love!

  • This crispy sunchoke recipe is a great appetizer or snack. It is simple to make and packed with fiber from the sunchokes.
  • This roasted veggie taco recipe is versatile. You can roast any veggies you like and add them to the tacos. Sprinkle some cheese from Tucumcari Mt. Cheese Factory to add some protein and calcium!
  • You can pair this dressing with roasted vegetables, vegetable sticks, salad mix, and more! It is high in vitamin A, and C, which is important for our immunity.
