What is scallion and what are its health benefits?
Scallions, green onions, and spring onions are the same thing, just called differently.  They are part of the genus Allium family, which includes greens like leeks, garlic, onions, shallots, and green garlic Green garlic and green onion often get mixed because they look like each other. Green garlic are immature garlic sprouts that look like scallions but are baby garlic. They are skinnier than scallions, but they have a fresh garlic scent, so if you aren’t sure, just give them a good sniff. For storage, you can store them either in the refrigerator or windowsill, root-side down in a tall jar. Fill the jar with an inch or two of water and place the jar either on the windowsill or refrigerator. Change the water every couple of days. A cup of scallions provides trace amounts of fat and zero cholesterol. They also have less sugar and fewer carbs than vegetables like carrots, potatoes, and corn. Please check out this Miso Roasted Scallions recipe. Zucchini Stir Fry –  Can be enjoyed with rice
 
Spanish Tortilla with Red Pepper
Avocado with Bell Pepper and Tomatoes
Bell peppers are an excellent source of vitamin C, especially the ripest peppers, which are red. Peppers are also a good source of vitamin A and fiber. Bell peppers also have antioxidant properties, which may help to protect against diseases such as cardiovascular disease and some cancers. Zucchini is rich in vitamin B6. Research suggests that vitamin B6 can help with regulating blood glucose and may even play a protective role against diabetes. You can substitute some ingredients with the below tips:
  • Cooking oil spray can be olive oil or avocado oil
  • Feel free to swap or add vegetables like broccoli, mushrooms, snap peas, eggplant, spinach, etc.
  • Tofu can be replaced with chicken, shrimp or beef
  • Soy sauce or tamari
  • Ginger can be ground or fresh
  • Cornstarch can be swapped for other thickening starch, like arrowroot powder.
