Honey from Altura Honey, a graduate of Three Sisters Kitchen’s Food Business Training Program
Altura Honey is owned by John Thomson and Luke Murphy. They are a small bee-keeping operation in Albuquerque. They not only produce hyper-local honey, but also do live-bee rescue for honey-bee swarms and honey-bee naturalized hives. Their honey-bee removal is a free service to all members of the Albuquerque community.
Please enjoy this gift from their local honey bees. One tip from Altura Honey- the beneficial properties of honey are preserved the best when less heating is involved. So go easy on the heat and enjoy! Check out the delicious recipe below shared by them.
Breakfast Bars
Ingredients:
● 1 cup of dried cranberries or raisins.
● 1/4 cup honey, maple syrup, or agave nectar
● 1/4 cup creamy salted natural peanut butter or almond butter
● 1 cup roasted unsalted almonds, loosely chopped
● 1 1/2 cups rolled oats
● A dash of cinnamon and nutmeg for a Fall twist!
● Optional toppings- chocolate chips, dried fruit, nuts, banana chips, vanilla.
Instructions:
1. Optional step: Toast your oats (and almonds if raw) in a 350-degree F (176 C) oven for 10-15 minutes or until slightly golden brown.
2. Place oats, almonds, and cranberries in a large mixing bowl. Set aside.
3. Warm honey and peanut butter in a small saucepan over very low heat. Stir, pour over oat mixture, and mix using a spatula or a wooden spoon
4. Once thoroughly mixed, transfer to an 8×8-inch baking dish or other small pan lined with plastic wrap or parchment paper so they lift out easily. (A loaf pan might work, but will yield thicker bars.
5. Press down firmly using a drinking glass, until uniformly flattened. This helps the bars stick together better.
6. Cover with parchment or plastic wrap, and let firm up in the fridge or freezer for 15-20 minutes.
7. Remove bars from pan and slice into 10 even bars
8. Store in an airtight container for up to a few days or in the freezer to keep them extra fresh longer.

Recipes We Love!

  • This Sauteed Swiss chard with raisins & pine nuts is easy to make and very delicious. You can substitute pine nuts with any seeds and nuts you like such as cashews, peanuts, or sunflower seeds.
  • For all of you who love potatoes, this delicious recipe is designed for you. This honey garlic roasted potato recipe gives a whole new flavor to the potatoes. It brings together spice with a taste of sweetness from the honey, which makes it unique! The red pepper flakes can be substituted with paprika, or chile powder, or not used at all.
  • These stuffed bell peppers are quick and easy to make and eat as a snack or as a side dish. If you are a vegetarian or vegan, you can substitute ground beef with tofu or lentils.

Harvesting Your Veggies and Fall Garden Cleanup
This is a free special event being offered to the community. In this presentation, you will learn about the proper way to care for your garden and the best practices in harvesting vegetables, yard waste disposal, and cover cropping.
