Featured ReFresh Bag Item

This week’s featured bag item is baby eggplant from Vida Verde Farm. We will use the bag to make a delicious roasted vegetable dish in our cooking class on Thursday. This dish can be eaten with meat or fish, rice, quinoa, or just as a snack.
Eggplant is full of nutrients like fiber, protein, vitamin K, vitamin C, manganese and folate. All these nutrients are beneficial to overall health. The purple color of the eggplant skin provides us with a good source of plant compound, anthocyanin, which is important for cancer prevention.

Recipes We Love!

  • This Roasted Butternut Squash recipe is easy to make with very little ingredients. This recipe is high in vitamin A, C, magnesium, and potassium. You can use any oil and substitute the maple syrup with honey.
  • Check out this homemade potato chip recipe for a healthier way to satisfy those salty and crispy cravings. This recipe only calls for 4 ingredients. You can substitute the russet potatoes with sweet potatoes and sprinkle some TSK spice shake on it!
  • This roasted turnip recipe is delicious and simple. This makes for a low carb and fiber filled appetizer or side dish. You can store the roasted turnips in the freezer and reheat them using the microwave to make a great snack for days to come.

Dia de Los Muertos celebration of life
This is a free event that is open to all ages. It is an opportunity to celebrate life with the community. There will be food, games, music, fun, and so much more.
