Sunchokes from Tres Arboles Farm
Sunchokes, also called sunroots, or Jerusalem artichokes, are native to central North America. They come from a species of sunflower grown for their tubers – or roots – and can be cooked or eaten raw. Sunchokes are packed with inulin, a type of insoluble fiber that is beneficial to our gut health. Because of their fiber content, sunchokes are also beneficial for blood sugar management.

Check out this roasted sunchoke recipe that is simple and easy. You can also roast carrots and purple daikon from the ReFresh bag together with sunchokes.

Recipes We Love!

  • This sauteed rainbow chard recipe makes for a great side dish or an evening snack. In addition to chard and garlic, you can add other vegetables like carrots or spinach. Chard is packed with vitamins A, K, and C, and magnesium, which are important for overall immunity.
  • This daikon radish and cucumber salad can be eaten as a side dish or as a main dish. This dish is refreshing and full of water because daikon and cucumber are packed with water. Peel the cucumber for less bitterness if you are not using English cucumbers.
  • This apple crumble recipe is a great mix of tart and sweet flavors. You can substitute butter and whipped cream with plant-based options.

Gratitude Run-Walk

This is a free community event, hosted by the Native Health Initiative, for friends and family to walk or run together. Their organizational mission is to help to drive community partnerships and to increase health equity in the community.
