Winter squash from Vida Verde Farm

Winter squash is an American crop, that has been around for about 11,700 years. Winter squashes come in many varieties, such as spaghetti squash, butternut squash, acorn squash, etc. Winter squash is packed with a lot of different nutrients, including vitamins A, C, and E, fiber, and more! It is beneficial for the skin, lungs, and building immunity!

Check out this warm roasted veggie salad. We will demonstrate this recipe during the online cooking class tomorrow!

Recipes We Love!

  • This Sautéed Spring greens recipe mixes an earthy flavor with a sweet and spicy addition. You can substitute bacon with any other type of meat or tofu. The mustard seeds in this recipe are great for boosting your immune system and bone health.
  • This Anasazi beans recipe is a simple and tasty way to make them. It takes about 2 hours to make them. This recipe is filled with flavors such as jalapenos, cumin, onion, and garlic. This bean recipe can be eaten as a side or a main dish.
  • This roasted sweet potatoes and carrots recipe is quick and easy to make. You can roast these vegetables in an air fryer or in the oven. This recipe can be added to your salads or eaten on its own as a side dish. Sweet potatoes and carrots are a great way to get fiber and carotene.

Chispas Family Music Day 
This is a free event for the whole family. This event is going on at the beautiful Chispas Farm. Come out for a fun-filled time with friends and family.

2023 Food Business Training Program (FBTP)
The 2023 application for the FBTP  is now open!  This is a 15-week training program for up-and-coming food manufacturers and food producers. It provides a great opportunity to help further your entrepreneurial aspirations in food business. It offers financial education as well as ways to make connections and partnerships with other companies in the community.
When: Applications are due by 5 pm on November 30th and the program begins January 24th, 2023
