Welcome to your fifth ReFresh newsletter of the season! We’re hoping for some more rain before the monsoon season ends to help out the local farms!

Tropea Onions
There are a variety of onions, including white onions, yellow onions, red onions, sweet onions, scallions, shallots, Tropea onions, and more!  Tropea Onions are originally from Tropea, Italy, a Southern beach town. They have red bulbs with green stems. The red part has a sweet, pleasant taste while the tops are more like scallions. Tropea onions are extremely versatile. They can be eaten raw in salads, used for garnishing soups, on top of bruschetta, cooked with beans, sauteed with vegetables, boiled as a soup, baked, or fried. You can also make jams, marmalades or mousses.

Recipes We Love!

Check out the below three recipes that you can use your Refresh bag with.
Sauteed Swiss Chard with Onions – Enjoy as a side dish with any protein.
Three Sisters Soup – Can be enjoyed as a side to a main dish or as a hardy meal.
Roasted Green Beans – Can be enjoyed as a side dish.
Chard – One cup of chard contains over 300% the recommended daily intake of vitamin K and 44% of the recommended amount of vitamin A. Chard can help fight cancer, reduce blood pressure, and may decrease insulin resistance and thus be beneficial for blood sugar management. Swiss chard can be eaten raw in a salad, blended in smoothies or cooked with other veggies.
Summer Squash – One medium squash contains 55% of the recommended daily intake of vitamin C, 20% of the recommended daily intake of vitamin B6, and contains potassium, iron, folate and magnesium. The health benefits of vitamin C are that it boosts the immune system which helps resist infection, helps wounds heal and keeps gums healthy. Summer squash can be roasted, sauteed or made in soup. It is best stored by blanching, freezing or dehydrating.
Green beans contain vitamin A, vitamin C, calcium, carotene, folate, magnesium phosphorus and potassium. Green beans are anti-inflammatory, they can help to manage cholesterol levels, can lower high blood pressure, prevent weakening of the bones and are good for gut health. Unwashed green beans stored in a reusable container or plastic bag in the crisper section of the refrigerator can last about 7 days. Blanching and freezing green beans will last far longer.
